Vegan Magic Bar

With my massive sweet tooth, I’ve always loved magic bars - they are truly magical in my view. When the chocolate chips, white chocolate, coconut, walnuts, and sweetened condensed milk hit your brain, it’s hard to remember any of your troubles! I adapted the Seven Layer Magic Bars Recipe on the Belle of the Kitchen blog into the vegan recipe shown here by using vegan butter, vegan white chocolate, and sweetened condensed coconut milk.

Vegan Magic Bar
Makes ~16 bars, depending on how big you want them

CRUST INGREDIENTS

  • 2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • Pinch salt

  • 1/2 cup vegan unsalted butter, melted (I use “Miyoko’s” brand)

TOPPINGS

  • 1 cup vegan bittersweet chocolate chips

  • 1 cup vegan white chocolate chunks or chips

  • 1 cup sweetened flaked coconut

  • 1/2 cup chopped walnuts

  • 1 14-ounce can sweetened condensed coconut milk

Preheat your oven to 350°F. In a small bowl, combine the graham cracker crumbs, sugar, salt, and melted butter. Press into a 9x13-inch pan lined with parchment. Bake for 8-10 minutes. Cool.

Scatter the chocolate chips, white chocolate, coconut, and walnuts over the crust, in that order. Spread the condensed milk evenly over the top. Bake 25-30 minutes, until the edges turn golden and the center is set.
